Plan de acompañamiento para establecimientos de alimentos y bebidas del cantón Sucre, provincia de Manabí para su recategorización.

Abstract

The present research paper consists in carrying out the design of an accompanying plan for food and beverage establishments in the Sucre county to achieve recategorization in accordance with the new regulations of the Ministry of Tourism of Ecuador (MinTur). As a first chapter, the entire theoretical foundation that supports research is presented with theories that focus on the importance of the tourism system and quality. On the other hand, the reference framework is considered studies carried out on improving infrastructure, customer service and good manufacturing practices. It also outlines the legal framework in which the laws and rules of the Republic of Ecuador are set out to which food and beverage establishments should be subject. In the second chapter, the diagnosis of the cafes and bars registered in the cadastre of the Sucre county was carried out, in order to determine the differences between the old registry and the current regulations, by applying the categorization sheets issued by the MinTur. The third chapter analyzed the legal environment that norms, promotes and supports the tourist activity of cafes and bars in the sector, through a comparative analysis between interviews with the main representatives of the tourism sector, the ordinances and competences transferred to the municipal GAD. Finally, Chapter Four proposes strategies and actions to be carried out by the establishments in order to recategorize and comply with the regulations established by the MinTur.
